Grilled Cheese Breakfast Sandwich

Preparation

2 slices bread
1 1/2 tablespoons butter, divided
1 large egg
2 ounces shredded cheese (cheddar, jack, or your favorite)
Handful cooked sweet potato fries (like these Baked Sweet Potato Fries)

Cut a hole in one of the bread slices using a drinking glass or a biscuit cutter, making a well for where the egg will be fried. Then butter one side of that slice, and one side of the other slice, using a tablespoon of the butter.

Warm a frying pan over a medium heat, then add the slice with the hole cut in it, buttered-side down. When browned, flip the bread slice, melt the remaining butter in the well of the bread, and add the egg.

Place the remaining slice of bread on the skillet, buttered-side down, and top with layers of cheese and the sweet potato fries.

Once the egg is fully cooked, the cheese should be melted. Place the bread with the egg on top of the cheese and sweet potatoes to make the sandwich. Cover the pan for a few seconds, letting the egg, cheese, and bread all melt together. Enjoy immediately!
