Step 1 Using a box grater, grate the daikon radish and set aside. In a small pan over medium heat, lightly toast the cumin seeds until fragrant, about 5 minutes. With a mortar and pestle, coarsely crush the seeds.
Step 2 In a medium bowl, mix together the radish, crushed cumin seeds, yogurt, minced chiles, cayenne pepper, and 1 teaspoon salt, or to taste. Set aside for at least 1 hour before serving.
