Ingredients
4 cups flour 2 1/2 teaspoons salt 1/4 cup sugar Scant 1 1/2 tablespoons active dry yeast 3 eggs, lightly beaten
Preparation

Step 1 In the large bowl of a mixer with a dough hook (you can also do this by hand), stir together the flour, salt, sugar and yeast, then gradually beat in one-half cup plus 2 tablespoons water and the eggs. Beat the dough for about 5 minutes, until it forms a loose, elastic mass around the dough hook.

Step 2 Turn the dough out onto a floured board and form a ball. Place the dough in a buttered bowl and loosely cover with plastic wrap. Set aside in a warm place until the dough doubles, about 2 hours.
