Pre-heat the oven to 350°F.
Halve the sweet potatoes and bake for 30-40 minutes. This can be done the day before.
Scoop out the potatoes and place in a bowl.
Place all the dry ingredients in a mixing bowl and stir with a spatula. Add the eggs and mix. Fold in the sweet potatoes and mix at medium speed.
Pour the mixture into two pie shells. Bake for 40-55 minutes. Using a toothpick, test to make sure the pie filling has set.
Cool and serve with vanilla ice cream, whipped cream and chocolate shavings.
