1 egg yolk

3 tbsp (45 ml) pale beer

2 tbsp (30 ml) whole-grain mustard

1 tbsp (15 ml) cider vinegar

1/2 cup (125 ml) canola oil

In a bowl, whisk together the egg yolk, beer, mustard and vinegar. Drizzle in the oil, whisking constantly. Season with salt and pepper, then set aside.
