4 green onions, finely sliced (white and green separated)
1 clove garlic, finely chopped
1/2 teaspoon (2.5 ml) celery seed
2 tablespoons (30 ml) butter
5 cups (1.25 litres) chicken broth
1 bay leaf
1/2 cup (125 ml) alphabet noodles
3/4 cup (180 ml) frozen peas (optional)
1 cup (250 ml) diced cooked chicken or to taste
Salt and pepper
In a saucepan, soften the carrots, celery, the white of the onions and garlic with the celery seeds in the butter. Season with salt and pepper. Add the broth and bay leaf. Bring to a boil. Cover and simmer for about 15 minutes or until the vegetables are tender. Add the noodles and peas. Bring to a boil and simmer for about 5 minutes or until noodles are tender. Remove the bay leaf. Add the chicken and green onions. Adjust the seasoning.
