6 oz (170 g) Jarlsberg cheese (or other firm cheese)
24 leaves fresh lemon or regular basil (see note)
Freshly ground pepper
With a mandoline, thinly slice the apple into 24 slices.
On a work surface, cut the cheese into 24 slices.
For each bite layer alternately 2 apple slices, 2 cheese slices and 2 basil leaves. Repeat with the remaining ingredients. Season with pepper.
Serve a Elderflower Ice Cider (see recipe) with an Apple and Cheese Bite placed on top of the glass.
