  • 1 zucchini, finely diced
  • 1 tomato, finely diced
    • 1 cup (250 ml) peas or
    • Finely diced snow peas
  • Preparation
  • In a large saucepan, soften the vegetables in the oil. Add the broth and bring to a boil. Season with salt and pepper. Remove from the heat and add the couscous. Cover and let stand for 5 minutes. Fluff with a fork.
  • Gently stir in the apple, mint and butter. Adjust the seasoning. Delicious with Mediterranean-Style Leg of Lamb.
