  • 7 cups (1.75 litres) old-fashioned apple cider
  • 1/4 cup (60 ml) maple syrup
  • 2 tbsp unbleached all-purpose flour
  • 2 tbsp cornstarch
  • 1 egg
  • 1/2 cup (125 ml) 35% cream
  • Preparation
  • In a large pot over medium heat, reduce the apple cider to 1 1/4 cups (310 ml), about 50┬áminutes. Skim, as needed. Remove from the heat. Add the maple syrup and let cool.
