1 bunch mint 4 litchis (canned in syrup if fresh is not available) 6 ounces fresh pressed apple juice from Granny Smiths (or substitute refrigerated, flash-pasteurized juice plus 1 teaspoon lemon juice per 8 ounces) 8 ounces premium vodka

Step 1 Wash the mint and set aside four sprigs for garnish. In a cocktail shaker, muddle about 14 mint sprigs and 2 of the litchis with 3 ounces of the apple juice and 4 ounces of the vodka.

Step 2 Add ice and shake until chilled. Strain into two ice-filled glasses and garnish with fresh mint. Repeat with the remaining mint, litchis, apple juice and vodka to make two more cocktails.
