In a skillet, brown the bacon over medium heat. With a slotted spoon, remove the bacon and set aside on paper towels.
In the same skillet, soften the onion and garlic in the bacon fat. Set aside in a bowl and let cool.
In another bowl, whisk together the oil, vinegar, mustard and maple syrup. Add the onion mixture and bacon. Season with salt and pepper.
Serve on beautiful garden lettuce leaves.
