Meanwhile, place all the syrup ingredients in a saucepan. Bring to a boil and simmer until the syrup has reduced by two thirds, about 10 minutes.
Remove the leaves from the pineapple, peel and cut into quarters. Core and cut the pineapple into thin slices. Place the slices on a beautiful serving platter. Drizzle with the hot syrup. Sprinkle lightly with sea salt and freshly ground pepper.
