Bean Sprout, Green Apple and Beef Salad

Ingredients
  • Butter, as needed
  • 1 slice 1 lb (454 g) boneless cross rib roast
  • 3 green apples
  • 3 cups (750 ml) bean sprouts
  • 3 green onions, finely chopped
  • 1/4 cup (60 ml) fresh cilantro, chopped
  • 1/2 cup (125 ml) roasted and chopped peanuts
  • Salt and pepper
  • Preparation
  • In a ridged skillet with a little butter on the grill, sear the beef on both sides for about 5 minutes for rare meat. Season with salt and pepper. Let stand for 5 minutes. Slice into thin strips and set aside.
  • With a mandolin or with a sharp knife, slice the apples into thin julienne strips.
  • In a bowl, combine the beef, apples, and remaining salad ingredients.
