  • 4 thick sirloin steaks (or 675g / 1 ½ lb skirt steak)
  • 1 large mango, peeled and cut into thin wedges
  • 75 ml (1/3 cup) roasted cashew nuts, coarsely chopped
  • 60 ml (¼ cup) chopped fresh cilantro
  • 60 ml (¼ cup) chopped Thai basil
  • 1 lime, juice only
  • Olive oil, to taste
  • 1 pinch crushed red pepper flakes
  • Salt and pepper
  • Preparation
  • Preheat the grill, setting the burners to high. Oil the grate.
  • Lightly oil and season the meat with salt and pepper. Grill the meat for 3 to 4 minutes on each side or until medium-rare. Transfer to a plate and let rest for about 5 minutes. Thinly slice the meat.
  • Spread the meat into a large serving platter. Garnish with the mango, cashews and herbs. Drizzle with the lime juice and olive oil. Sprinkle with a little pepper flakes.
