75 ml (1/3 cup) roasted cashew nuts, coarsely chopped
60 ml (¼ cup) chopped fresh cilantro
60 ml (¼ cup) chopped Thai basil
1 lime, juice only
Olive oil, to taste
1 pinch crushed red pepper flakes
Salt and pepper
Preheat the grill, setting the burners to high. Oil the grate.
Lightly oil and season the meat with salt and pepper. Grill the meat for 3 to 4 minutes on each side or until medium-rare. Transfer to a plate and let rest for about 5 minutes. Thinly slice the meat.
Spread the meat into a large serving platter. Garnish with the mango, cashews and herbs. Drizzle with the lime juice and olive oil. Sprinkle with a little pepper flakes.
