Ingredients
  • 1 cup (250 ml) wild rice
  • 5 cups (1.25 litres) salted water
  • 1 cup (250 ml) canned black beans, rinsed and drained
  • 1/2 cup (125 ml) celery, diced
  • 1/2 cup (125 ml) red bell pepper, diced
  • 1 green apple, diced
  • 1/2 cup (125 ml) corn kernels
  • 1/4 cup (60 ml) red onion, finely chopped
  • 2 tablespoons (30 ml) fresh coriander, chopped
  • 2 tablespoons (30 ml) fresh mint, chopped
  • 2 tablespoons (30 ml) lime juice
  • 2 tablespoons (30 ml) olive oil
  • Salt and pepper
  • Preparation
  • In a saucepan, bring the rice and water to a boil. Cover and simmer over medium heat for about 1 hour. Drain. Place the cooked rice in a bowl and let cool.
  • In a salad bowl, combine the cooled rice with the remaining ingredients. Adjust the seasoning and serve.
