1 cup (250 ml) canned black beans, rinsed and drained
1/2 cup (125 ml) celery, diced
1/2 cup (125 ml) red bell pepper, diced
1 green apple, diced
1/2 cup (125 ml) corn kernels
1/4 cup (60 ml) red onion, finely chopped
2 tablespoons (30 ml) fresh coriander, chopped
2 tablespoons (30 ml) fresh mint, chopped
2 tablespoons (30 ml) lime juice
2 tablespoons (30 ml) olive oil
Salt and pepper
Preparation
In a saucepan, bring the rice and water to a boil. Cover and simmer over medium heat for about 1 hour. Drain. Place the cooked rice in a bowl and let cool.
In a salad bowl, combine the cooled rice with the remaining ingredients. Adjust the seasoning and serve.
