Chicken and Wild Rice Soup

Ingredients
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 2 tablespoons (30 ml) butter
  • 1/2 cup (125 ml) wild rice
  • 5 cups (1.25 litres) chicken broth, preferably homemade (see recipe Homemade Chicken Broth)
  • Salt and pepper
  • 3/4 cup (180 ml) carrot, diced
  • 3/4 cups (180 ml) potatoes, diced
  • 1 cup (250 ml) diced cooked chicken
  • Preparation
  • In a large saucepan, soften the onion and garlic in the butter. Add the wild rice and stir for 1 minute. Add the broth. Season with salt and pepper. Cover and bring to a boil. Simmer over low heat for 30 minutes.
  • Add the carrots and potatoes. Cover. Bring to a boil and simmer for 30 more minutes or until the rice and vegetables are tender.
  • Add the chicken and heat through. Adjust the seasoning. Serve with bread.
