Ingredients
  • The ribs of 2 celery heads, peeled (see note)
  • 1/2 cup (125 ml) white wine
  • 1/2 cup (125 ml) chicken broth
  • 2 teaspoons (10 ml) Pastis liqueur
  • 8 cloves garlic, thinly sliced
  • 1/4 cup (60 ml) butter
  • Salt and pepper
  • Preparation
  • With the rack in the middle position, preheat the oven to 200 °C (400 °F).
  • In a large baking dish, spread the celery ribs. If necessary, cut the same length as the dish to fit them. Add the wine, broth, and Pastis. Sprinkle with the garlic and butter. Season with salt and pepper.
  • Cover with aluminum foil and bake for 40 minutes. Remove the foil and continue baking for about 15 minutes or until the celery is very tender. Serve with the Salt-Cured Turkey, Roast Beef with Onions or a pork roast.
