Chutney-Glazed Pork Tenderloin

Ingredients
  • 2 pork tenderloins
  • 2 tablespoons (30 ml) butter
  • 1 tablespoon (15 ml) vegetable oil
  • 1 cup (250 ml) homemade or store-bought chutney (see recipe Mango Chutney)
  • 1 cup (250 ml) orange juice
  • 1 clove garlic, finely chopped
  • 1 sprig rosemary
  • Salt and pepper
  • Preparation
  • Preheat the oven to 180 °C (350 °F).
  • Dust the tenderloins with flour. In a saucepan, sear them in the butter and oil.
  • Add the remaining ingredients and bring to a boil.
  • Bake for about 20 minutes for medium rare.
  • Slice the tenderloins and serve with good mashed potatoes or sweet potatoes.
