Preheat the oil in the deep fryer to 180°C (350°F).
In a bowl, combine the flours, sugar, baking powder and salt. Make a well in the centre and place the egg and buttermilk. Blend until it is smooth.
Slide the skewers into the centre of the sausages. Coat well in the batter, one by one. Fry, two sausages at a time, until the batter is golden brown, about 5 minutes. Keep warm.
Repeat with the remaining sausages. Serve with a choice of mustards.
