Ingredients
  • 250 ml (1 cup) corn flour
  • 250 ml (1 cup) all-purpose flour
  • 10 ml (2 tsp) baking powder
  • 5 ml (1 tsp) salt
  • 5 ml (1 tsp) ground pepper
  • 2 eggs
  • 375 ml (1 1/2 cups) milk
  • 375 ml (1 1/2 cups) corn kernels, cooked
  • 375 ml (1 1/2 cups) grated extra-sharp cheddar cheese
  • 60 ml (1/4 cup) chopped chives
  • Preparation
  • With the rack in the lowest position, preheat the oven to 180 °C (350 °F). Generously butter 12 muffin cups.
  • In a bowl, combine the flour, baking powder, salt and pepper.
  • In another bowl, combine the remaining ingredients. Stir into the dry ingredients until just blended.
  • Spoon into the muffin cups. Bake for about 20 minutes. Serve warm.
