Ingredients
  • 4 cups (1 litre) stale country bread, cut into 3/4-inch (1.5-cm) cubes
  • 2 cloves garlic, finely chopped
  • 1/2 cup (125 ml) olive oil
  • 3 tablespoons (45 ml) white wine vinegar
  • Salt and pepper
  • 1 yellow bell pepper, diced
  • 2 cups (500 ml) cucumber, peeled and cubed
  • 4 yellow tomatoes, diced
  • 1 cup (250 ml) corn kernels, cooked
  • 3 green onions, finely chopped
  • Salt and pepper
  • 1/2 cup (125 ml) fresh basil, chopped
  • Preparation
  • Place the bread in a bowl and cover with cold water. Squeeze the water out with your hands. The bread should retain its shape.
  • In a bowl, combine the garlic, oil and vinegar. Season with salt and pepper.
  • In a large bowl, combine the bread, vegetables and basil. Stir in the dressing. Adjust the seasoning. Goes well with grilled meat, poultry and fish. This "Sunny yellow" salad is perfect for a picnic. Eat within 24 hours.
