1 cup (250 ml) English cucumber thinly sliced with a mandolin
4 teaspoons (20 ml) white wine vinegar
2 tomatoes, sliced in thin strips
1 cup (250 ml) minced spinach
4 teaspoons (20 ml) olive oil
Salt and pepper
In a bowl, combine the cucumber and vinegar. Let stand for 5 minutes
Add the remaining ingredients. Adjust the seasoning. Serve with Faux Fried Chicken Fingers.
