Step 1 In a stand mixer fitted with a paddle attachment, or in a large bowl using a hand mixer, combine the flour, sugar and butter, mixing until the butter is mostly incorporated and the mixture resembles coarse oatmeal. Add the egg and mix just until combined. Cover the bowl and refrigerate the crust for at least 1 hour to chill.
Step 2 Grease a 9-inch springform or cheesecake pan.
Step 3Press the crust base onto the bottom and just over two-thirds up the sides of the pan. Chill until ready to assemble the final dish.
