Ingredients
  • 2 pita breads
  • 3 tomatoes, diced
  • 4 green onions, finely chopped
  • 1 yellow bell pepper, finely chopped
  • 1 small head romaine lettuce, shredded
  • 1/4 cup (60 ml) fresh parsley, chopped
  • 1 English cucumber, diced
  • 1/4 cup (60 ml) whole black olives
  • Preparation
  • With the rack in the middle position, preheat the oven to 180 °C (350 °F).
  • Place the bread on a baking sheet and bake for about 15 minutes or until crisp. Let cool then break into pieces.
  • In a bowl, combine all the salad ingredients, including the pita pieces.
  • In a bowl, whisk together all the vinaigrette ingredients.
  • Pour the vinaigrette over the salad. Toss to coat and serve immediately.
