  • 1 onion, finely chopped
  • 2 tablespoons (30 ml) olive oil
  • 1/4 cup (60 ml) tomato paste
  • 2 tablespoons (30 ml) white wine vinegar
  • 1 tablespoon (15 ml) sugar
  • 1/4 cup (60 ml) mayonnaise
  • Salt and pepper
  • Preparation
  • In a saucepan, soften the onion in the oil. Season with salt and pepper. Add the tomato paste, vinegar and sugar. Continue cooking for about 3 minutes, stirring frequently. Chill. Whisk in the mayonnaise. Adjust the seasoning. Serve cold.
