2 slices white bread (or whole-wheat)

5 ml (1 tsp) Dijon mustard

15 ml (1 tbsp) roasted red pepper pesto (optional)

60 g (2 oz) thin white ham slices (2 to 3 slices)

30 g (1 oz) cheddar cheese, sliced

Spread the mustard on one slice of bread and the roasted pepper pesto on the other. Garnish with the ham and cheese.

Close the sandwich. Cover in plastic wrap or place in a sealable plastic bag and freeze.
