Rinse the olives if they are too salty. Drain and dry thoroughly.
Cut the cheese into 24 small rectangles that can be slipped into the olives.

Dip the olives in the egg, then dredge in the flour. Dip again in the egg and coat with breadcrumbs.
Preheat the oil in the deep fryer to 190°C (375°F). Fry the olives, eight at a time, for 2 to 3 minutes or until golden brown. Drain on paper towels. Serve immediately.
