Ingredients
  • 24 large green olives, pitted
  • 2 oz (50 g) Grana Padano cheese, approximately
  • 1 egg, lightly beaten
  • 1/2 cup (125 ml) flour
  • 1/2 cup (125 m) breadcrumbs
  • Preparation
  • Rinse the olives if they are too salty. Drain and dry thoroughly.
  • Cut the cheese into 24 small rectangles that can be slipped into the olives.
  • Stuff the olives with the cheese.
  • Dip the olives in the egg, then dredge in the flour. Dip again in the egg and coat with breadcrumbs.
  • Preheat the oil in the deep fryer to 190°C (375°F). Fry the olives, eight at a time, for 2 to 3 minutes or until golden brown. Drain on paper towels. Serve immediately.
