  • 30 ml (2 tbsp) lemon juice
  • 1 egg yolk
  • 5 ml (1 tsp) Dijon mustard
  • 1/2 clove garlic, finely chopped
  • 60 ml (1/4 cup) butter, melted
  • 60 ml (1/4 cup) canola oil
  • Salt and pepper
  • Preparation
  • In a bowl, combine the lemon juice, egg yolk, mustard and garlic with a whisk. Slowly drizzle in the melted butter, drop by drop, whisking constantly.
  • When the mayonnaise begins to set, drizzle in the oil, whisking constantly. Season with salt and pepper. Add a little water, if needed, if the mayonnaise seems too thick.
