Garlic Mashed Potatoes with Steamed Kale

Ingredients
  • 6 medium potatoes, peeled and cut into pieces
  • 3 cups (750 ml) kale, thinly sliced
  • 1 clove garlic, finely chopped
  • 1/4 cup (60 ml) butter
  • 3/4 cup (180 ml) milk, approximately
  • 2 tablespoons (30 ml) fresh parsley, minced
  • Salt and pepper
  • Preparation
  • In a saucepan, cook the potatoes in salted boiling water until tender, about 20 minutes.
  • In a steamer, cook the kale until tender, about 10 minutes.
  • Meanwhile, soften the garlic in a little butter. Do not let brown.
  • With a masher, mash the potatoes with the garlic and butter. Then, with an electric mixer, purée with the milk. Add the kale and parsley. Continue to beat with the electric mixer to blend in the kale. Season with salt and pepper.
