Ingredients
  • 3 cups (750 ml) flour
  • 2 tablespoons (30 ml) mixed spices
  • 1 teaspoon (5 ml) ground ginger
  • 1 teaspoon (5 ml) baking soda
  • 1/2 cup (125 ml) unsalted butter
  • 1/2 cup (125 ml) brown sugar
  • 1/4 cup (60 ml) honey
  • 1/4 cup (60 ml) molasses
  • 1 egg
  • Preparation
  • With the rack in the middle position, preheat the oven to 180 °C (350 °F).
  • In a bowl, combine the flour, spices and baking soda.
  • In a saucepan, melt the butter, brown sugar, honey and molasses, stirring until the sugar has dissolved.
  • Make a well in the centre of the dry ingredients and pour in the hot molasses mixture. Stir with a wooden spoon. Add the egg and stir until the dough is smooth and not sticky. Add a little flour if needed. Allow to cool.
  • On a floured work surface, roll out the dough the same thickness of a pie crust. Cut cookies with a cookie cutter in the shape of a snowman, a star and/or other forms. Place the cookies on an ungreased baking sheet and bake for 8 to 10 minutes, depending on their size. Decorate with royal icing (recipe below) and candies, if desired.
