Ingredients
  • 2 grapefruits, scrubbed clean
  • 1/2 cup (105 g) sugar
  • 2 tbsp (30 ml) lemon juice
  • Preparation
  • Finely grate the zest of 1 grapefruit. Juice both grapefruits to obtain 1 cup (250 ml) of juice.
  • In a small saucepan, bring the grapefruit zest and juice, sugar and lemon juice to a boil. Simmer for 5 minutes. Pour the mixture into an airtight container. Let cool, cover and refrigerate.
  • Use in cocktails, or to flavour carbonated water. This simple syrup will keep for 2 weeks in the refrigerator.
