1 red bell pepper, seeded and cut into thin strips
2 green onions, chopped
2 tablespoons (30 ml) mirin
2 tablespoons (30 ml) rice vinegar
1 tablespoon (15 ml) fish sauce (nuoc mam)
1/2 teaspoon (2.5 ml) sambal oelek
2 Curried Chicken breast halved, cooked, chilled, and sliced (see recipe)
1 tablespoon (15 ml) chopped fresh mint (optional)
Preparation
In a bowl, combine all the ingredients except for the chicken and mint. Serve the curried chicken with the green mango salad. Sprinkle with the mint.
