Grilled Eggplant Bites with Yogurt and Nuts

Ingredients
  • 1/2 cup (125 ml) plain yogurt (min. 4% MF)
  • 1/2 cup (125 ml) grated sharp cheddar
  • 1/4 cup (60 ml) toasted almonds, chopped
  • 1/4 cup (60 ml) walnuts, chopped
  • 1 clove garlic, finely chopped
  • 2 teaspoons (10 ml) chopped fresh dill
  • 24 small slices eggplant, about 2 inches (5 cm) across and 1/8 inch (1/4 cm) thick
  • 3 tablespoons (45 ml) olive oil
  • Salt and pepper
  • Preparation
  • In a bowl, combine the yogurt, cheddar, nuts, garlic and dill. Season with salt and pepper. Refrigerate.
  • Preheat the grill, setting the burners to high.
  • Brush the eggplant slices with oil. Season with salt and pepper. Grill for 1 to 2 minutes per side. Let cool.
  • Spoon about 10 ml (2 teaspoons) of the nut mixture on half the eggplant slices. Lay a second slice on top.
  • Serve warm or cold as an hors d’oeuvre.
