With a stand mixer or food processor (use the kneading hook or plastic blade respectively), combine the flour, yeast and salt.
Add the water mixture and mix on medium speed or process until the dough forms a soft ball.
Transfer the dough to a floured surface and knead until smooth, about 5 minutes. Shape into a ball and place in a clean, lightly oiled bowl. Cover the bowl with a damp tea towel and set the bowl in a warm, humid location for about 1 hour.
Preheat the grill, setting the burners to high.
On a floured surface, divide the dough into 4 equal pieces. Shape each piece into an uneven disc about 20 cm (8 inches) across.
Grill the nans for about 1 minute per side. Brush with melted butter. Serve immediately with Indian food, grilled vegetables or meal salads.
