Ingredients
  • 1 onion, chopped
  • 1 chicken breast, thinly sliced
  • 1 tablespoon (15 ml) butter
  • 1/2 cup (125 ml) rice
  • 1 cup (250 ml) Earth Shake original unsweetened soy milk
  • 8 whole shrimp, peeled
  • 1 carrot, thinly sliced
  • 12 snow peas
  • 2 shallots, thinly sliced
  • 2 teaspoons (10 ml) chopped ginger
  • 1 teaspoon (5 ml) chopped garlic
  • 2 1/2 cups (600 ml) chicken broth
  • 2 tablespoons (30 ml) cilantro leaves
  • 1 tablespoon (15 ml) finely chopped lemongrass
  • Salt and pepper
  • Preparation
  • In a large skillet, brown the onion and chicken in the butter. Add the rice and soy milk. Season to taste.
  • Cover and simmer until the liquid has been absorbed. Keep warm.
  • In a saucepan, cook the shrimp until pink and firm. Add the vegetables, ginger and garlic. After a minute of cooking, add the chicken broth. In each individual bowls spoon a serving of rice, add cilantro and cover with broth and its garnishes.
