Ingredients
  • 6 tablespoons (90 ml) butter
  • 1/2 cup (125 ml) flour
  • 1 teaspoon (5 ml) dry mustard
  • 1 teaspoon (5 ml) chili powder
  • 1/4 teaspoon (1 ml) paprika
  • 1 pinch Cayenne pepper (or to taste)
  • 4 cups (1 litre) beef broth
  • 1 tablespoon (15 ml) ketchup
  • 1 teaspoon (5 ml) Worcestershire sauce
  • 1/2 teaspoon (2.5 ml) onion salt
  • Preparation
  • In a saucepan, melt the butter. Add the flour and cook, stirring constantly, until golden brown, about 3 minutes. Add the spices and cook for 1 more minute. Add the remaining ingredients and bring to a boil while whisking. Simmer gently, stirring frequently, for about 10 minutes. Adjust the seasoning. Cover and keep warm.
