  • 1 tbsp juniper berries
  • 1 tsp coriander seeds
  • 1 tsp fennel seeds
  • 3 cardamom pods
  • 2 cups (420 g) sugar
  • 1 cup (250 ml) water
  • 3 tbsp (45 ml) lime juice
  • Preparation
  • Using a mortar and pestle, roughly grind the juniper berries, the coriander seeds, the fennel seeds and the cardamom pods. Place the spices in a pot. Add the sugar, the water and the lime juice.
  • Bring to a boil over medium heat and let simmer for 5 minutes. Strain.
  • Pour into an airtight container. Let cool, cover and refrigerate. The syrup will keep for 1 month in the refrigerator.
