Lamb Burgers with Hummus and Tomato, Cucumber and Yogurt Salad

Ingredients
  • 1/4 cup (45 g) bulgur
  • 1/2 cup (125 ml) boiling water
  • 1 lb (450 g) ground lamb
  • 1 egg, lightly beaten
  • 1/2 tsp paprika
  • 1/4 tsp ground cumin
  • 1/4 tsp cayenne
  • 1/4 tsp allspice
  • Preparation
  • Place the bulgur in a bowl and cover with the boiling water. Let soak for 30 minutes. Strain through a sieve and return to the bowl. Add the lamb, egg and spices. Mix well. Season with salt and pepper. Shape 2 large patties the same size as the pita bread. Transfer to a plate. Cover and refrigerate 30 minutes.
