Ingredients
  • 8 cups (2 litres) sliced leeks (white part only)
  • 2 tablespoons (30 ml) butter
  • 2 tablespoons (30 ml) olive oil
  • 1/2 cup (125 ml) white wine
  • Salt and pepper
  • Preparation
  • In a saucepan, soften the leeks over medium heat in the butter and oil. Season with salt and pepper. Deglaze with the wine and reduce until dry. Let cool before adding to the recipe of your choice.
