  • 1/2 red bell pepper, diced
  • 1 small onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tablespoon (5 ml) of olive oil
  • 1 1/2 cups (375 ml) quinoa, rinsed
  • Juice and grated zest of 1 lemon
  • 2 1/4 cups (560 ml) water
  • Salt and pepper
  • Preparation
  • In a saucepan over medium heat, soften the pepper, onion and garlic in the oil. Add the remaining ingredients. Season with salt and pepper. Bring to a boil. Cover and simmer over medium heat, about 12 minutes. Remove from the heat and let stand for 10 minutes. Adjust the seasoning. Quinoa can be served hot or cold.
