Ingredients
  • 1 shallot, chopped
  • 2 tbsp (30 ml) butter
  • 1 tbsp unbleached all-purpose flour
  • 1/2 cup (125 ml) 35% cream
  • 1/2 cup (125 ml) milk
  • 1/4 cup (60 ml) grated Gruyère cheese
  • 1 tsp (5 ml) Dijon mustard
  • Salt and pepper
  • Preparation
  • In a small saucepan, sauté the shallot in the butter. Add the flour and cook for about 1 minute. Add the cream and milk and bring to a boil, stirring constantly with a whisk. Simmer for about 2 minutes.
  • Off the heat, add the cheese and mustard and stir until the cheese has melted. Season with salt and pepper. Set aside.
