Maple and Nut Palmier Cookies
Rating: (1 rated)
Ingredients
  • 3/4 cup (180 ml) granulated maple sugar
  • 411 g store-bought puff pastry, thawed
  • 1/2 cup (125 ml) pecans, toasted and chopped
  • Preparation
  • Line two baking sheets with parchment paper.
  • On a work surface, sprinkle half the maple sugar. Roll out the dough on the sugar (the same way you would use flour) into a 50 x 25-cm (20 X 10-inch) rectangle. Spread the remaining sugar over the dough. Sprinkle with the pecans and press lightly. Fold the two shorter sides inward, 2.5-cm (1-inch) at a time and close, one on top of the other. Place on a baking sheet and freeze for about 40 minutes or until the dough is semi-frozen.
  • With the rack in the middle position, preheat the oven to 190 °C (375 °F).
  • Cut into ½-cm (1/4-inch) thick slices and place on the baking sheets. Bake, one sheet at a time, for about 18 minutes or until the cookies are golden brown and crispy. Let cool completely.
  • Store in an airtight container.
