Ingredients
  • 4 pork chops 3/4-inch (2-cm) thick, with the bone
  • 1 tablespoon (15 ml) olive oil
  • 3 tablespoons (45 ml) butter
  • Salt and pepper
  • 1/2 onion, finely chopped
  • 2 teaspoons (10 ml) flour
  • 1/3 cup (75 ml) Sortilege Maple liqueur
  • 1 cup (250 ml) chicken broth
  • 1 teaspoon (5 ml) Worcestershire sauce
  • 1/4 cup (60 ml) 35% or 15% cooking cream
  • Preparation
  • Trim off the fat from the chops. In a large skillet, sear them over medium heat in the oil and 15 ml (1 tablespoon) of butter until golden brown, about 3 minutes per side.
  • Season with salt and pepper.
  • Meanwhile, in a saucepan, soften the onion in the remaining butter until translucent. Sprinkle with the flour and add the liqueur. Stir and cook for 2 minutes. Add the remaining ingredients and bring to a boil over medium heat, stirring constantly. Reduce by a little more than half, about 5 minutes.
