Ingredients
1/4 cup unsweetened pomegranate molasses 1/4 cup honey 1/4 teaspoon ground coriander 1/2 teaspoon cinnamon 1/2 teaspoon allspice 1/4 teaspoon nutmeg 1/4 teaspoon black pepper 1/2 teaspoon ground ginger 4 cloves garlic, crushed Salt 1 (4- to 5-pound) whole chicken
Preparation

Step 1 In a medium bowl, whisk together the pomegranate molasses, honey, ground coriander, cinnamon, allspice, nutmeg, black pepper, ginger, crushed garlic and one-half teaspoon salt.

Step 2 Rinse the chicken and pat dry. Place the chicken in a glass or non-reactive bowl and rub marinade into the skin and inner cavity, then pour over any remaining marinade. Cover and chill overnight.
