Ingredients
  • 2 cups (500 ml) unbleached all-purpose flour
  • 1 1/2 teaspoons (7.5 ml) baking powder
  • 1/2 cup (125 ml) unsalted butter, softened
  • 1 cup (250 ml) sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (250 ml) leftover mashed potatoes
  • 2 tablespoons (30 ml) 35% cream
  • Whipped cream (optional)
  • Fresh berries (optional)
  • Preparation
  • With the rack in the middle position, preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.
  • In a bowl, combine the flour and baking powder. Set aside.
  • In another bowl, cream the butter, sugar and vanilla with an electric mixer. Add the potatoes and beat until smooth. With a wooden spoon, stir in the dry ingredients alternately with the cream.
  • On a floured work surface, flatten the dough with your hands until it is about 2-cm (3/4-inch) thick.
  • With a 6-cm (2 1/2-inch) round cookie cutter, cut biscuits from the dough. Combine and flatten the scraps and cut more biscuits. You should have 10 biscuits in all.
  • Place the biscuits on the baking sheet. Bake until a toothpick inserted in the centre of a biscuit comes out clean, 16 to 18 minutes. Let cool.
  • Serve warm or cold.
