1 cup (250 ml) matzo meal or unsalted soda crackers (about 25 crackers)
3 tablespoons (45 ml) vegetable oil or duck fat
3 tablespoons (45 ml) chicken broth
3 eggs
1 tablespoon (15 ml) chopped flat-leaf parsley

Preparation
Pulverize the matzo meal in a food processor.
In a bowl, combine all the ingredients. Season with salt and pepper. Cover and refrigerate for 1 hour (the mixture will firm up but remain quite malleable).
