  • 1 cup (250 ml) matzo meal or unsalted soda crackers (about 25 crackers)
  • 3 tablespoons (45 ml) vegetable oil or duck fat
  • 3 tablespoons (45 ml) chicken broth
  • 3 eggs
  • 1 tablespoon (15 ml) chopped flat-leaf parsley
  • Salt and pepper

  • Pulverize the matzo meal in a food processor.
  • In a bowl, combine all the ingredients. Season with salt and pepper. Cover and refrigerate for 1 hour (the mixture will firm up but remain quite malleable).
