8 oz (235 g) Doré-mi cheese, cut into 8 slices (or halloumi cheese) (see note)

2 plum tomatoes, quartered
2 grilled chicken breast halves, thinly sliced (see recipe Grilled Chicken)
2 cups (500 ml) arugula

Preheat the grill, setting the burners to medium. Oil the grate.
Brush the bread and cheese slices with the oil on both sides.

Rub one side of each bread slice with the garlic. Then rub the same side with a tomato wedge, pressing firmly. Season with salt and pepper. Top with the chicken, grilled cheese, and arugula. Top with another slice of bread for a thick sandwich or serve as an open-faced sandwich.
