Mediterranean Chicken and Grilled Cheese Sandwich

  • 4 to 8 slices of bread
  • 8 oz (235 g) DorĂ©-mi cheese, cut into 8 slices (or halloumi cheese) (see note)
  • Olive oil, for brushing
  • 2 cloves garlic, peeled and halved
  • 2 plum tomatoes, quartered
  • 2 grilled chicken breast halves, thinly sliced (see recipe Grilled Chicken)
  • 2 cups (500 ml) arugula
  • Salt and pepper
  • Preparation
  • Preheat the grill, setting the burners to medium. Oil the grate.
  • Brush the bread and cheese slices with the oil on both sides.
  • Grill the bread and cheese on both sides.
  • Rub one side of each bread slice with the garlic. Then rub the same side with a tomato wedge, pressing firmly. Season with salt and pepper. Top with the chicken, grilled cheese, and arugula. Top with another slice of bread for a thick sandwich or serve as an open-faced sandwich.
