  • 4 slices crusty Italian bread about 1/2 inch (1 cm) thick
  • 2 slices bacon, finely chopped
  • 2 shallots, finely chopped
  • 8 oz (227 g) mushrooms, sliced
  • 1 tablespoon (15 ml) lemon juice
  • 1 cup (250 ml) grated Gouda cheese
  • Preparation
  • With the rack in the middle position, preheat the oven to 220°C (425°F).
  • Arrange the bread slices in a single layer on a large wire rack. Place the rack on a baking sheet and set aside.
  • In a skillet over medium heat, fry the bacon until crisp. Add the shallots and continue cooking 1 to 2 minutes. Add the mushrooms and sauté over high heat until golden brown, about 5 to 7 minutes. Season with salt and pepper.
  • Deglaze with the lemon juice and adjust the seasoning. Top the bread slices with the mushroom mixture. Sprinkle with cheese and bake for about 10 minutes. If necessary, broil until the cheese is browned.
