2 tablespoons (30 ml) oil-packed black olives, coarsely chopped (optional)
2 Boston or curly lettuce leaves
Tomato slices
2 eggs, hard-boiled, sliced

Preparation
In a bowl, combine the tuna, mayonnaise and green onion. Season with pepper.
Spread mayonnaise on one side of each slice of bread.
On a slice of whole-wheat bread, spread some of the tuna mixture and garnish with olives. Cover with a slice of white bread. Layer the lettuce, tomato and egg. Finish with a slice of whole-wheat bread.
Cut the sandwiches diagonally into triangles and secure with toothpicks.
