No-Cook Strawberry and Mint Jam

Ingredients
  • 6 cups (1.5 litres) fresh strawberries
  • 1 1/2 cups (375 ml) sugar
  • 2 teaspoons (10 ml) fresh mint, chopped
  • Grated zest of 1 lemon
  • 1 package 45 g freezer jam pectin (Bernardin-type)
  • Preparation
  • Coarsely crush the strawberries with a potato masher. Add the sugar, mint and lemon zest. Stir to combine and let stand for 15 minutes. Add the pectin and stir for 3 minutes. Let stand for 5 minutes. Pour into sterilized jars. Close tightly and freeze.
  • The jam will keep in the freezer for up to 1 year or 3 weeks in the refrigerator.
